Raspberry Champagne Cake is made up of champagne infused cake with raspberry champagne jam and vanilla buttercream.

Ingredients

Champagne Cake
  • 2 1/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 cups granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1 cup (or 2 sticks) unsalted butter
  • 2 whole eggs
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup Champagne
Raspberry Champagne Jam
  • 2 cups fresh or frozen raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 4 tablespoons water
  • 2 tablespoons lemon zest
  • 1/4 cup Champagne
Vanilla Buttercream
  • 2 cups (or 4 sticks) unsalted butter, room temperature
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 7 1/2 cups powdered sugar, sifted
  • 2 tablespoons heavy cream
